The Marshmallows
When my kids were little, I was (uh, and still am) best friends with Sara Sohn of Sweet and Sara Marshmallows. One of my girls' fondest memories growing up was visiting her marshmallow factory, where she would let them run wild, filling up bags with vegan rice Krispies treats and other goodies.
Sadly, she closed her biz down years ago, but it's awesome that marshmallows free of gelatin are now pretty mainstream. Choose a brand like Dandies from Chicago Vegan Foods, or the even cheaper, and just as good ones from Trader Joe's that are absolutely indistinguishable from non-vegetarian marshmallows, without having to melt down a gosh darn horse or whatever.
The Graham Crackers
These form the structural sandwich layers and add a toasty, caramelized crunch. Go for a variety that's sturdy enough to support the gooey center and has a clean, snapable break. Nabisco Original Grahams, Kinnikinnick S'moreables, and Kroger Original Graham Crackers are all vegan-friendly options, as long as you choose the OG, non-honey versions.
Popsicle Sticks
You only need these if you are making your S'mores as pops, which is totally optional. Either compressed paper sticks (like the kind used for larger cake pops) or wooden popsicle sticks work great here. Both options will give you the stability you need for dipping, decorating, and freezing. Obviously, make sure they're food-safe and wide enough to hold the s'mores sandwich securely.
Powdered Sugar
Powdered sugar thickens and sweetens the green "skin" coating, helping it set with that ideal cling that settles into every edge and corner. Not all powdered sugar is vegan, so check the label or do a quick search to be sure.
Food Coloring

Candy Eyes
Don't dream of skipping the googly eyes-they're what sells the whole monster makeover. Most major candy brands make them, but many versions contain non-vegan confectioner's glaze. You can find a clearly labeled vegan version or whip up a batch yourself using my vegan royal icing recipe, made just a little thicker with less liquid so it pipes thick and sets up hard. The Chocolate Chips
Use semi-sweet vegan chocolate chips to create the hair and piped details. Look for chips with high cocoa butter content-they'll melt more smoothly and set up without looking grainy.
Thin Pretzel Sticks
Thin pretzel sticks stand in as Frankenstein's neck bolts, giving you that silhouette and a welcome jolt of salt to offset all the sweetness. Break each stick in half and insert the pieces into the sides of the sandwich while the coating is still soft; they'll stay put and not stick out so far that people think they are stupid-looking arms.

📖 How to make Frankenstein s'mores
Skip down to the printable recipe card if you're ready to get poppin'. But for a Frankenstein you can be proud of, follow these monster-making steps:

Step One
Monster Mashup:
Line a parchment-lined sheet pan with half of the graham cracker squares.
Step Two
All Mallow's Eve:
Place 2 vegan marshmallows and 2 teaspoons of vegan chocolate chips onto each graham cracker square.
Step Three
The Canterville Toast:
Briefly toast marshmallows using a kitchen torch or under a broiler until softened but not fully blackened all around.
Step Four
The Coffin Lid:
Top each with a second graham cracker square while the filling is still warm. Transfer the assembled s'mores to the freezer. Chill for 20 minutes.
✅ If making these as pops, insert a popsicle stick into the center of each marshmallow layer while it's still soft and melty before chilling. Leave the stick's handle exposed.

Step Five
Soylent Green:

Break pretzel sticks in half and press one piece into each side near the bottom.

Melt the vegan chocolate chips in a clean double boiler setup. Once melted, let it cool just enough so that it is thick enough to pipe and not runny.

Transfer the melted chocolate to a piping bag fitted with a small tip. Pipe on mouths, hair, and stitches.

- Freeze First: A quick chill solidifies the marshmallow layer and gives the pops a sturdier structure for coating. It also keeps the popsicle stick locked in place so your monsters don't slip off mid-dip.
- Don't Skip the Parchment: This isn't the time to get wild with bare pans. Parchment ensures the pops lift off cleanly after setting and won't leave you with chocolate casualties.
- Work Fast: Timing is everything. Once the coating goes on, you've got a short window to attach eyes and bolts before it hardens. Set up your decorating station ahead of time.
- Edge Lord: When placing the top graham cracker on each sandwich, use a butter knife or small offset spatula to gently push the marshmallow and chocolate filling out toward the edges. This ensures each smore looks neatly squared once coated, and helps the filling peek out cleanly through the green shell.

Equipment

Ingredients
- 16 vegan marshmallows
- 16 vegan graham crackers
- 8 popsicle sticks (optional for making as pops)
- 3 cups powdered sugar
- ¼ cup unsweetened plant-based milk
- ½ teaspoon vanilla extract
- vegan green food coloring amount depends on brand and if color is natural or artificial
- 32 vegan candy googly eyes
- 1 ½ cups semi-sweet chocolate chips
- 16 thin pretzel sticks
Instructions
- Line a sheet pan with parchment paper and place half of the graham cracker squares onto it.
- Place 2 marshmallows and 2 teaspoons of chocolate chips over the graham cracker squares.
- Either by using a torch or a short time under a broiler, partially melt the marshmallows.
- Immediately place the top halves of the graham crackers over the still-warm marshmallow and chocolate filling.
- If making these as pops, press a popsicle stick into the center of the marshmallow layer, leaving the handle exposed.
- Place the assembled sandwiches into your freezer for 20 minutes.
- Meanwhile, place plant milk into a stand mixer bowl and sift the powdered sugar on top of it. With a whisk attachment, mix the glaze until thick and smooth. Gradually add green food coloring while the mixer runs to reach your desired tint of green.
- Carefully and generously coat each sandwich with the green coating, using a spoon or offset spatula to help cover all sides, without getting it all over the popsicle sticks. Let excess drip off before placing each sandwich onto a wire rack.
- Press 2 candy eyes into the upper third of each sandwich while the coating is still tacky.
- Break the pretzel sticks in half and insert each half into each side of the sandwich. Transfer back to the freezer to set.
- Meanwhile, melt the vegan chocolate chips in a clean double boiler. Let cool until thick enough to pipe without running.
- Transfer the melted chocolate to a piping bag fitted with a very small round tip. Pipe a mouth, hair, and maybe some forehead stitches onto each face. Refrigerate the sandwiches until fully set. Remove from the refrigerator a few minutes before serving.
