Did you know that for over a decade I catered vegan Thanksgiving every year all over the tri-state area?
There were some years when we made the complete dinner for several thousand families! It was kinda exhausting, but helping people avoid eating animals on this traditionally meat-centered holiday has always made it a gratifying thing to put energy into.
It can be a tricky meal to prepare, because often you are sharing it with people who are staunchly anti-vegan. But I’ve got you. I have had a lot of experience seeing what works and doesn’t work, and what people love the most. I put together this year's menu to blow people's minds if they are vegan, but even more so if they aren’t (yet).

✅ Cauliflower Chestnut Puff Pastries: Lightly spiced cauliflower chestnut filling in a light crispy pastry makes a fantastic hors d’oeuvre to serve your guests as you get the final touches put onto your feast!
🧄 Crispy Parsnip Confit: with garlic sage and currants.
🍷 Seitan Bordelaise: With shallots, red wine sauce, and a classic herbal butter.
🌿 Turkish-style green beans: It’s easy to prep part of this dish in advance so that there is little do the day of to get the perfect green side dish onto the table, cooked just right.
🎃 Roasted Pumpkin Soup: with cardamom roasted pumpkin seeds, coconut milk, herbs and a hint of smokiness.
🥔 Perfect truffle mashed potatoes: You are gonna want to pay close attention and take some notes. I am sharing some of my favorite hacks to make the fluffiest most perfect ‘taters you ever had, vegan or not.
🍩Butternut Squash Spice Donuts: A shockingly good Thanksgiving donut with cream cheese frosting. What’s that? Never made donuts before? Don’t sweat it. With a little guidance from me, you will make these perfectly!

I don’t use commercial equipment in the classes and give a lot of guidance and hacks to make things in an easy, practical way in a normal home kitchen. I provide links where students can order any ingredients that might be hard to find.
I teach these classes out of my home kitchen, and I demonstrate the recipes without industrial cooking equipment. I provide links for any obscure ingredients, and suggestions for equipment that you might find useful.
