Vegan Italian desserts have serrrrrriously come a long way from the sad fruit cups you spot lurking in the corner of the restaurant menu while you cry into your napkin.
Cloud-like bomboloni stuffed with vanilla cream, silky panna cotta, cannoli, all of that. A lot of classic Italian desserts are surprisingly easy to veganize too, since things like cashews, coconut milk, aquafaba, and dairy-free butter step in like total champions.
Are zeppole traditionally dairy-free?
Because my wife's dad owned a ton of pizza spots and did it this way, I always sorta assumed that all pizza places made their zappole vegan, just using leftover pizza dough.
The main culprit you have to watch for is bone char sugar. Get a certified organic powdered sugar, and suddenly your kitchen smells like an old-school Italian bakery in the best possible way.
