Tex-Mex is Southwestern-influenced, Americanized Mexican food, and in my humble opinion there's nothing wrong with that. It's its own delicious thing, it just isn't the same at all as traditional Mexican cooking.
Authentic Mexican cuisine is deeply regional, relies on a huge variety of dried chiles, and uses techniques like toasting on a comal or grinding in a molcajete that genuinely affect flavor in ways shortcuts can't replicate.
Tex-Mex streamlines all of that. You're more likely to see flour tortillas, cumin-heavy spice blends (even stuff like generic "taco seasoning"), and a lot of melted cheese (in our case vegan, of course) than a hand-ground salsa or complex mole poblano.
If you want to go deep on how Mexican food got Americanized, Gustavo Arellano's book Taco USA: How Mexican Food Conquered America is the definitive read. It covers the completely wild history of how authentic Mexican cuisine got mutated into bowling alley nachos and Taco Bell.
A solid Tex-Mex spice cabinet is actually pretty simple. Here's what you need:
Cumin: the undisputed MVP. Shows up in basically everything and gives Tex-Mex that warm, earthy backbone that makes it taste like itself.
"Mexican" Chili powder: essential for that classic reddish, deeply savory flavor.
Smoked paprika: adds smokiness without any heavy lifting.
Garlic powder + onion powder: the quiet workhorses of every good Tex-Mex dish.
Chipotle powder: stupidly useful for smoky heat in a pinch.
Oregano + cayenne: round out the heat and herbaceous notes.
Of course, there are a ton of options out there: store-bought meat crumbles, lentils, walnut meat, but my personal favorite for Tex-Mex cooking is tofu that's been given a beefy texture (no for real, it IS possible). When you season it right and cook it properly, tofu takes on a ridiculously meaty texture that holds up beautifully in tacos, burritos, enchiladas, and pretty much anything else you'd normally reach for ground beef for.
It's the base of my vegan tofu chorizo, vegan picadillo, and tofu tacos, and in all 3 cases the tofu completely rocks it.
